Asian Cucumber Salad

Here’s an easy recipe I make as a quick side dish to my Asian barbecue meals, this adds some freshness to any meal. I hope you enjoy it!


INGREDIENTS


  • – 2 cucumbers, thinly sliced
    – 2 tablespoons rice vinegar
    – 1 tablespoon sesame oil
    – 1 tablespoon soy sauce
    – 1 teaspoon sugar
    – 1 teaspoon sesame seeds
    – 1/2 teaspoon red pepper flakes (adjust to your spice preference)
    – Chopped fresh cilantro for garnish (optional)

Instructions

1. In a bowl, whisk together the rice vinegar, sesame oil, soy sauce, sugar, sesame seeds, and red pepper flakes. Adjust the seasonings to your taste.

2. Place the thinly sliced cucumbers in a serving bowl.

3. Pour the dressing over the cucumbers and toss to coat them evenly.

4. Let the salad sit in the refrigerator for about 15-30 minutes to allow the flavors to meld and the cucumbers to marinate.

5. Before serving, garnish with chopped cilantro if desired.

You can also add cold soba noodles as a cold noodle salad dish!
